Reel in the canapes
No festive gathering is complete without a few irresistible bites to get the conversation flowing. Keep things simple but special: smoked salmon blinis, pigs in blankets, prawn cocktails, and of course, freshly shucked oysters. Wright and Hancock love to swap classic smoked salmon for vibrant beetroot gravlax – a pop of colour that makes a beautiful festive spread.
Shake up the centrepiece
When it comes to the main event, think beyond the traditional roast. Wright and Hanock often trade turkey for a whole roast market fish. Brill is one of their favourites, a delicious flat fish which is highly underrated. It may not be as popular as the better-known turbot, but it’s usually great value for money, and many prefer it for its sweet, delicate flavour. It’s simple to prepare, striking to serve, and perfect for sharing around the table. Wright and Hanock like to channel a little Aussie spirit at Christmas and fire up the barbecue to cook the fish centrepiece. It keeps things super relaxed, adds incredible flavour, and frees up precious oven space for all those must-have trimmings.
Drink like a fish
