Have you ever tried chillis in a cocktail? It's one of those things that probably shouldn't work but just, well, does. The sweet, sour tang of sugar and citrus followed up with the hot aftertaste of chilli is a winning combination, as shown by this cocktail V Chilli Martini from cocktail and champagne bar Voltaire, which features Martini and Tanqueray gin as well as a hint of parsley.

· Fresh chilli

· Fresh parsley

· 10ml Dry Martini,

· 50ml Tanqueray 10

· 10ml sugar syrup

· 10ml fresh lime juice

Muddle two slices of fresh chilli and parsley together into a shaker; combine Dry Martini, Tanqueray, sugar syrup, and fresh lime. Shake well for 5-10 seconds and strain into a chilled Martini glass. Garnish with a whole chilli and enjoy.
