Tinned fish has never been more popular. You can’t scroll through an Instagram recipe page these days without finding pan con tomate with sardines, or some variation of tuna pasta or salad.
Few ingredients make as much difference to a dish as the quality of the fish. The difference between supermarket seafood and high-quality local fish can transform even the simplest dish. Yet in the UK, only around 10% of the fish we eat actually comes from British waters, meaning the other 90% is imported. Likewise, 80% of what we catch is exported. In other words, Britain exports most of its fish and imports most of what it eats - a strange imbalance for an island nation.
It’s this disconnect that inspired Sea Sisters, a Dorset-based craft seafood cannery specialising in small-batch, hand-crafted conservas.
