Few food products hold as much cultural, economic and patriotic importance as Parmigiano Reggiano PDO. Key to that is its heritage; it’s been given one of the most important certifications, the Protected Designation of Origin (PDO), which identifies products with distinctive characteristics and importance to the area in which they are produced.
It’s a cheese steeped in history. Its inherent secret weapon is its ability to stand alone as a a cheese – making it the perfect means for kicking off a meal, equally enhancing a dish as it is served chunked on a cheese board alongside seasonal fruit and nuts.

This versatility extends to maturations, from 12 to 30 months and beyond, which can completely change the cheese’s flavour profile. For this recipe, you can choose 12-, 18-, or 24-month Parmigiano Reggiano PDO, depending on the desired intensity.
Wedges with Parmigiano Reggiano PDO
Wedges with Parmigiano Reggiano PDO
Serves 4-6
Ingredients
- 750g red-skinned potatoes, cut into thick wedges, skin left on
- 50g polenta flour
- 70g of either 12, 18 or 24-month Parmigiano Reggiano PDO, grated
- Needles of 4 rosemary sprigs, finely chopped
- ½ handful sage leaves, finely chopped
- Salt & pepper
- Olive oil for drizzling
Method
- Preheat the oven to 180°C fan.
- Place the potatoes into a large pan of salted water, bring to the boil and cook for 3 minutes. Drain well and then either steam-dry or pat dry on a clean tea towel.
- Place the potatoes into a roasting tin and drizzle with olive oil.
- Combine polenta flour, grated Parmigiano Reggiano PDO, chopped herbs and some salt and pepper and coat the potatoes well with this mix. Return to the tin and roast for 20 minutes. After this time, increase the heat to 200°C and continue roasting for 10 minutes, until golden brown.
- Remove from the oven and serve.
