Mezcal is delicious. But mezcal is also very complicated. Did you know, for example, the term 'mezcal' can broadly be used to refer to any agave spirit, so it covers tequila, mezcal and more – and mezcal sits in its own category under the same name, just to make things complicated.

So if you want to learn more about what you're drinking, it's probably worth learning from an expert. And that's exactly what you'll be able to do at Sin Gusano's three-week collaborative pop up with Pensador mezcal at Milk Bar in Soho. 

Sin Gusano founder Jon Darby will be offering tasting flights that bring together rare distillates from the range that'll help you get your palate around mezcal different flavour profiles. 

There'll be mezcal cocktails on offer, too: the Gingerloma; a heady mix of Pensador mezcal, grapefruit, ginger juice, lime, agave syrup and soda; and the Sin Fashion, which blends Sin Gusano's Tobaziche agave distillate with chocolate bitters and agave syrup stirred with ice and topped with burnt orange.

But this year brings something new to the table – mezcal boiler makers, which are inspired by the Mexican way of drinking mezcal. Sin Gusano is collaborating with London favourite Anspach & Hobday to offer three mezcal and beer chasers. 

And once you've tasted all those different kinds of mezcal, you'll be able to bring your favourite home with you, too, because there'll be an on-site off licence with Pensador's mezcal, as well as Sin Gusano's Tasting Sets and rare distillate bottles that will be available to try before you buy. Perfect for Christmas presents or, you know, keeping all for yourself...
