In India, thepauwa is a drinker’s best friend – a flat, quarter-­measure bottle of any spirit, it comes small enough to tuck away in a pocket, but carries just the right measure of booze to get the drinker a little 'talli', which means tipsy.

Casual modern Indian joint Talli Joe is celebrating this tradition by bringing pauwa cocktails to its menu, which are served alongside paired small snacking dishes known as chakhnas

Here's the recipe for the kesar kasturi pauwa, which uses saffron, grapefruit and rose water to recreate the flavours of Jaipur.

Ingredients

  • 50ml grapefruit juice
  • 15ml sugar syrup
  • 10 drops of rose water
  • 50ml Bombay Sapphire
  • Grapefruit slice, to garnish

Method

Add all ingredients to a tin along with ice and shake. Serve in a pauwa bottle (180ml) and garnish with the grapefruit.
