Ron Zacapa's rum cocktail with leek and balsamic vinegar
This cocktail with Ron Zacapa 23 is all smoky sweetness and aromatic flavour from the leeks. It's an unusual mix, but a good one – here's the recipe

Ingredients
- 50ml Zacapa 23
- 2 slices of honey-roasted leek (lightly muddled in a mixing glass)
- 3ml balsamic vinegar
- 2 pinches all spice
- 5ml honey
- 10ml chestnut liqueur
Method
Stir down all the ingredients and double strain over ice. Serve in a rocks glass and garnish with a slice of leek.
