Chancery Lane’s India India has been a firm favourite with Central London office workers and residents for years now, serving as one of the best Indian restaurants in London.

The challenge? Kingfisher sent Foodism staff writer Ally Head (@allyyhead) down in person to learn the tricks of the trade from their head chef Kabir and then attempt to recreate it on her own for a dinner party with friends.

Working in the kitchen for decades means that Kabir really knows his stuff when it comes to flavour combinations and cooking techniques. Ally hopes that, by learning from Kabir’s expertise, she’ll be able to up her curry game and make sure her guests leave content.

When Ally heads down, they cook two mains, a paneer jalfrezi and a lamb tikka masala, and two sides, a chicken tikka and an aloo chaat puree. They’re fragrant, fresh and delicious - something Ally can only hope to recreate in her own kitchen.
