If you're like us, you like what you eat and drink to carry with it a sense of place; an indelible mark of where it comes from, and with it an assurance that it's been created with careful stewardship of the environment that produces it.

We're in no doubt that The Botanist Gin, made on the isle of Islay in Scotland, is one such product: made with 22 botanicals foraged carefully from around the island and with top-notch ecological and sustainable credentials, it's a gin that wears its home proudly on its sleeve.

And while we reckon that the best place to drink it might well be on a windswept corner of Islay itself, we think we've found the next-best thing: The Botanist Gin Terrace.

The terrace has been launched in partnership with the beautiful St Pancras Renaissance Hotel, a stone's throw from the historic railway station, and is running throughout summer.

The Botanist Gin and sustainability

The Botanist Gin is proud to be a spirit that has a positive effect on the world around it.

The distillery puts an array of progressive initiatives into practice, under four key pillars of sustainability: Agriculture & Biodiversity, Packaging & Waste, Islay & Community and Energy.

The company is also certified as a B Corp, a label given in recognition of meeting the highest standards of social and environmental impact.

Everything's designed to help you unwind, from the garden chairs, sofas and even a playful The Botanist Gin swing, while on the drinks front, the menu sees the hotel's passionate bar team using the spirit in artful cocktails like The Botanist Cosmo of 1934 and The Botanist Negroni. They're all served alongside a menu of sharing plates and with live music, sports and entertainment thrown in, too.

Alternatively, if you're a little further south, Southampton's only five-star hotel is teaming up with acclaimed spirits brand The Botanist Gin to create an exclusive greenhouse-inspired pop-up bar.

The terrace at Southampton Harbour Hotel's Har Bar will be serving seasonally inspired cocktails that foreground floral notes, and are garnished with fresh herbs as a nod to Islay's rugged landscape.

So there you have it: the perfect chance to experience a taste of Islay in the middle of the city. We'll drink to that...

The Botanist Gin Terrace runs Thursday-Saturday from 1pm-10pm. For more info or to book, go to thehansom.co.uk/roofgarden
