Don't get us wrong – we love a balls-out, classic cocktail – something that'll knock our socks off and have us good and merry by 9pm. But on this most romantic of days, sometimes you need something colourful, fizzy and flirtatious. This drink, from 8 Mount Street's hidden bar Bar Eight, is just that.

Ingredients
- 25ml Sipsmith gin
- 3 tsp pink grapefruit juice
- 2 tsp pomegranate syrup (see below)
- Champagne, to top
Method
The pomegranate syrup
Combine two parts sugar and one part freshly pressed pomegranate juice, mix together and let it rest overnight. When the sugar and pomegranate juice has settled, pour off the pomegranate syrup, bottle it and store in the fridge.
The cocktail
Add the gin, grapefruit juice and pomegranate syrup to a Boston glass. Shake with ice and fine strain into a flute. Top up the flute with champagne, stir and garnish with a a little grapefruit zest and a frozen heart made from cranberry juice. Happy Valentine's!
