Summer's winding down – and to ease in the transition from sun (ish) to rain, here's a great autumnal cocktail from Scottish gin brand Caorunn

Ingredients
- 1 part Caorunn Gin
- 2 parts premium tonic water
- 1 Red Delicious apple, or other sweet red apple
- Rhubarb
- Ginger
Method
Build the ingredients over cubed ice in a highball glass. Garnish with finely cut rhubarb, apple julienne sticks and a slice of ginger.
